Sparkling Pomegranate Mojito

The summer is a great time to take some days off and to travel.  However, with our hectic schedules we may not have the time to travel abroad. This special recipe will make you feel like you are relaxing on a beautiful beach. Summer is a fantastic time to infuse color into your table decor. Whether you are using colorful veggies or colorful cocktails, I’m all in! Impress your friends with this sparkling pomegranate mojito. Try the the recipe below and let me know how it goes!

Pomegranate Mojito Ingredients

Serves 2

Mint sprigs and lime wedges for garnish

1 Tbsp. Agave

Juice from one whole lime

Seeds from half a Pomegranate

½ cup rum

1 cup Pomegranate juice

½ cup club soda



The first thing I like to do is prepare the ingredients, so in this case that would mean slicing the lemons and removing the seeds from the pomegranate. The next step is to place the seeds, mint leaves, and lime in bottom of glass and mix so they are equally distributed throughout the mojito. Next, add all the liquid to the mix; rum, pomegranate juice, and club soda. Then add agave and ice cubes and stir thoroughly.

I recommend you keep the fruit, juice, club soda, and rum chilled before getting started so you can enjoy the chilled refreshing drink right away! This is the perfect drink to enjoy with family and friends in the upcoming summer sun on your patio.  But wait, there’s more: mojitos can be made with different fruits to create a exotic flavors. Try substituting the pomegranate for passion fruit or watermelon. These two fruits make for a delicious and refreshing drink!

PS: For a celebratory twist, substitute the club soda with Prosecco!
